MUSHROOM SALAD





Ingredients:
6 White Button Mushrooms
1 Handful Cherry Tomatoes
½ Cucumber
½ Red Pepper
1 Handful Arugula
½ Yellow Onion
1 tsp. Olive Oil
1 tsp. Balsamic Vinegar
Directions:
- Wash and chop up all vegetables. Place in bowl.
- Add olive oil and vinegar to taste. Skip these if you prefer your salad dressed differently.
- Add protein if you want: grilled fish, canned tuna or sardines (add lemon for taste), or chicken/turkey breast.
- Mix and enjoy.
Mushrooms are some of our favorite ingredients. Other than making delicious soups with them, we like adding them to salads and sandwiches. They can be cooked or eaten raw which gives them a lot of versatility. This salad utilizes raw mushrooms and is 100% raw (unless you add some cooked protein of your choice.)
