1 Medium Zucchini
1/2 Large Carrot
Salt & Pepper
- Wash zucchini and carrots.
- Use your Spiralizer to create the look and feel of noodles from your zucchini vegetable.
- Slice up carrot to add into the salad.
- Add salt & pepper to taste.
- Mix and enjoy.
I eat the lean version of the noodle frequently. A small portion of this is great to use as a side salad. A larger portion can be your main dish.
For extra energy and to fill up more, I’ll throw in a little olive oil or avocado. Actually, my favorite thing to mix this with is sardines.
You can also easily make this “salad” into a soup or stir-fry. Look out for those versions of the recipes of on other days.
