LEAN NOODLE SALAD

Ingredients:

1 Medium Zucchini

1/2 Large Carrot

Salt & Pepper

Directions:
  1. Wash zucchini and carrots.
  2. Use your Spiralizer to create the look and feel of noodles from your zucchini vegetable.
  3. Slice up carrot to add into the salad.
  4. Add salt & pepper to taste.
  5. Mix and enjoy.

I eat the lean version of the noodle frequently. A small portion of this is great to use as a side salad. A larger portion can be your main dish. 

For extra energy and to fill up more, I’ll throw in a little olive oil or avocado. Actually, my favorite thing to mix this with is sardines. 

You can also easily make this “salad” into a soup or stir-fry. Look out for those versions of the recipes of on other days.
