ROASTED CALAMARI OVER SALAD

Ingredients:

1/3 lb. Raw Squid & Calamari

1 Handful Romaine Lettuce

1/3 Cucumber

1/4 Cup Cherry Tomatoes

1/2 Tbsp. of Olive Oil

Cayenne, Cumin, and Paprika

Salt & Pepper

 

Directions:
  1. Pre-heat oven to 400 degrees.
  2. Add olive oil to baking dish and use a brush to spread it around the surface area.
  3. Add squid & calamari. Season with spices to taste.
  4. Bake for about 15-20 minutes (or until golden brown and crispy on the outside.)
  5. Chop up cucumber, romaine lettuce, and tomatoes.
  6. Add handful of romaine to plate and then add the cucumber, tomatoes and calamari.
Calamari is light and flavorful and this salad serves as a delicious treat on a night that you’re not too hungry on. This meal has tons of protein and is low in fat. If you feel like you need more, add 1/2 a cup of grains or a piece of toast and 1/4 avocado to satisfy you.
